Since we are still working on our New Year’s goals and resolutions this low carb soup is healthy and delicious. If you’re really against carbs, take out the barley and try riced cauliflower. Or add both!? When I made the soup this time I did not add the cauliflower. Now, I know cabbage rolls are normally made with rice, feel free to use that instead of barley if you’d like.

A time saving trick would be to brown the hamburger ahead of time and then just add it with the rest of the ingredients when you are ready to start the instant pot.

Instant Pot Unstuffed Cabbage Roll Soup

A quick, one pot supper. Healthy and delicious. 
Course Dinner, Main Course, Supper

Ingredients
  

  • 1 tbl olive oil
  • 1 lb ground beef (thawed)
  • 1/2 head chopped green cabbage (4-5 cups)
  • 14 oz diced tomatoes
  • 14 oz basil, oregano, garlic diced tomatoes
  • 5 cups beef broth
  • 1/2 cup diced onions (or 3/4 cup if you like onions)
  • 1 tsp salt
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 cup quick cooking barley
  • 2 cloves garlic, minced
  • 2 tsp sugar
  • 1 tsp pepper
  • 1/4 tsp hot sauce
  • Parmesan cheese

Instructions
 

  • Add olive oil, hamburger and onions to pressure cooker. Turn to saute mode and brown hamburger while chopping it up. Turn off of saute mode.
    Add the remaining ingredients to the pressure cooker. Stir. 
    Place lid on and lock. Double check valve. Cook at high pressure for 20 minutes. Natural pressure release for at least 12 minutes, 
    Top with shredded Parmesan cheese if feeling fancy.
