Meal Plan for January 11-18

  • Sunday Chicken Pot Pie Casserole with Cheddar Biscuit Topping – I am making the chicken ahead of time either in the crockpot of Instant Pot. Depending on time, I may also use store bought biscuits and throw them on top.
  • MondayCreamy Parmesan Tomato and Spinach Tortellini Soup – For this I plan to have it made on Sunday and all ready to just warm up on Monday night because I have an appointment in the evening. Even though the taste will be a little different than if I were using Italian sausage, I am going to add hamburger. We like the additional protein.
  • TuesdaySteaks, Baked Potatoes and Green Beans – Nothing overly special here. We’ll make the steaks on the stove top then finish them in the oven. To quicken the baking of the potatoes they’ll be made in the microwave.
  • WednesdayLeftovers – There will most likely be leftovers from earlier in the week so we will eat those up now.
  • ThursdayRing Bologna, Rice and Broccoli – Again this is a pretty simple meal. Warm the ring bolgona in water. Most likely the rice will be a box of Rice a Roni and then a bag of steamed broccoli.
  • FridayBaked Fish – By this time of the week I am kind of over cooking a nightly meal. I know we have frozen fish in the freezer so this is the option if we have nothing else lined up.
  • Saturday – Saturdays are always a hit or miss with home-cooked meals. This is Noah’s weekend to work so I am do BLTs with soup.
